Tapas of smoked duck breast, figs and gingerbread
- 3.5 oz of smoked duck breast sliced
- 7 oz of fresh figs
- 1 teaspoon of cinnamon
- 1 teaspoon of fresh ginger
- 1 tablespoon of honey
- 1 teaspoon of salt
- 3 teaspoons of Espelette pepper
Peel the figs and cut them into small pieces. To prepare the accompaniment, mix the figs with the cinnamon, the fresh ginger, honey, salt and Espelette pepper in a saucepan. Reduce the preparation slowly until you get a slightly candied mixture.
Allow to cool and keep aside…
Cut thin slices of smoked duck breast, and remove the skin. Carefully place a little bit of candied mixture on a slice of gingerbread and cover it with a slice of smoked duck breast.
